Wild Orange Energy Bites



I make variations of these little bites of wonder for many of my events, and am constantly asked for the recipe.... SO.... here it is. I never really make it exactly the same way twice, so if yours tastes a wee bit different, that may be why, plus we each put our own healing energy into the food that we make, so no two recipes will ever taste exactly alike!

This recipe requires the use of a Vitamix. (If you need one, let me know... I have access to some good pricing on them!)

Ingredients:

1 cup pitted date

4 Tbsp almond butter

1/4 cup dark chocolate, roughly chopped

1 Tbsp coconut oil

2 Tbsp chia seeds

3/4 cup gluten free rolled oats

1/4 cup shredded coconut

Pinch Himalayan sea salt

2 drops doTerra Wild Orange essential oil

2 drops doTerra Tangerine essential oil

Directions:

Add the Wild Orange and Tangerine essential oils to chia seeds, mix well and set aside. Place dates in Vitamix and process on low until they begin to form a ball. Add the infused chia seeds, oats, coconut oil, almond butter and pinch of Himalayan sea salt to Vitamix. Process on low, stopping to scrape down sides occasionally, until well combined. Place contents in medium size mixing bowl. Roll into bite size balls. Roll in coconut to coat. Store in refrigerator (or freezer) until ready to serve.
